Mastering food safety control and contamination prevention in your establishment

The Hygiene and Food Safety – Food Establishment Manager training course is an asset for any food and restaurant services professional in a management position. This training course, which leads to a certificate from the Ministère de l’Agriculture, des Pêcheries et de l’Alimentation (MAPAQ) Ce lien s'ouvrira dans une nouvelle fenêtre, will teach you how to properly support your team in order to prevent  your establishment from any risks of food contamination. This training course is intended for managers of any establishments that produce, process, sell or deliver food.

Skills targeted by the training
Maintain a prevention and control system to guarantee food safety:

  • Analyze risk situations in your establishment
  • Implement procedures to better manage risks
  • Quickly make the necessary corrections in the event of non-compliance
  • Provide staff training on hygiene and food safety rules
  • Know the skills food handlers must have

Training content

  • Food storage temperatures
  • Working methods to avoid food contamination
  • The general principles of hygiene applicable to any person who is in contact with food or with material or equipment which is in contact with food
  • Procedures for cleaning, sanitizing or disinfecting materials and equipment
  • Environmental sources of food contamination
  • Microbiological, physical and chemical risks linked to hygiene and food safety
  • The origin of food
  • Food labeling
  • Risk analysis and assessment (hazard assessment)
  • Risk management (implementation of appropriate controls and procedures and establishment of corrective actions where necessary)
  • Legal and regulatory standards relating to hygiene and food safety
  • The development of continuing training activities with regard to hygiene and food safety rules

$120.00 Price includes training, taxes and exam. A preferential rate is available for agricultural producers. Write directly to the Training Advisor to learn more and obtain the promotional code.

The pass mark for the exam is 60% and the Guide to Good Hygiene and Food Safety Practices is authorized during the exam. The duration is 60 minutes.

In the event of failure, a repeat may be requested, without repeating the training, within 90 days following the date of receipt of notice of the failure.

You will receive your MAPAQ certificate number within 24 hours following the exam.
